Ingredients

  • 1 sheet of puff pastry thawed
  • 4 large eggs
  • ¼ cup milk
  • ½ cup shredded cheddar cheese
  • 4 strips of cooked bacon or ½ cup sausage crumbles
  • Salt and black pepper to taste
  • 1 tbsp butter for scrambling eggs
  • 1 egg for egg wash

Instructions

  • Step 1: Preheat Oven
Set oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Step 2: Make the Filling
In a skillet, melt butter and scramble 4 eggs with milk, salt, and pepper. Cook until soft but set. Let cool slightly.
  • Step 3: Cut the Pastry
Roll out puff pastry and cut into 6 even rectangles. Set aside half as the base, the other half as the tops.
  • Step 4: Assemble
Place scrambled eggs, crumbled bacon or sausage, and cheese on the base pieces. Top with remaining pastry rectangles. Seal the edges with a fork and brush tops with egg wash.
  • Step 5: Bake
Bake for 18–20 minutes or until golden brown. Let cool a few minutes before serving.

Notes

Secret Tips from Chef Derek

  1. Seal with Steam Power: Before sealing the edges with a fork, brush a little water or egg wash around the border—this locks the filling in and prevents leaks.
  2. Don’t Overfill: A little filling goes a long way. Too much can burst the pastry as it bakes. Keep it compact for a clean, flaky bite.
  3. Chill Before Baking: Pop the assembled pop-tarts in the fridge for 10 minutes before baking. Cold dough puffs better and holds its shape.
  4. Custom Cheese Blend: Mix sharp cheddar with a bit of mozzarella for the perfect combo of flavor and melt.
  5. Breakfast for Dinner Hack: Pair your savory pop-tarts with a green salad and roasted potatoes for an unexpected, crowd-pleasing dinner.
  6. Upgrade with Garlic Butter: After baking, brush the tops lightly with garlic butter for a crave-worthy, bakery-style finish.
